Vegan Chickpea Sumac Salad

This simple vegan salad recipe comes together in a matter of minutes, requires no cooking, and is packed with protein & nutrients.

Instructions
  1. Peel and dice the onion.
  2. In a large bowl, add the onions and combine the Staghorn Sumac, and SweetSpicy. Use your hands to massage the spices and salt into the onions. Drain off any excess liquid that develops in the bottom of the bowl.
  3. Combine chickpeas and chopped parsley to the onions.
  4. In a separate bowl, whisk together the lemon juice, olive oil, and pomegranate syrup. Combine with the salad until the onions are fully incorporated and no longer in small clumps.
  5. Season to taste with salt and pepper. Refrigerate until serving (this salad gets better overnight).
  6. Just before serving, finely chop the mint leaves and sprinkle over the salad.
