Crabless Crabcakes

Hearts of palm shreds into a crablike texture to form the meat of this vegetarian entree. We hacked the Oldbay flavor profile by using a ratio of 3:2 SweetSpicy to Savory_0%Salt. The deep paprika flavor of the SweetSpicy coupled with Savory’s herbs and celery seed forms the base of this traditional dish. This recipe can be cooked either by frying the cakes or baking for a healthier alternative. The formed uncooked cakes can be made a head of time and refrigerated overnight.

  1. In a nonstick skillet, heat the 1 tablespoon of oil. Add the corn, onion and bell pepper and cook over high heat until crisp-tender, approx. 4 minutes.
  2. Scrape 1 cup of mixture along with the garbanzo beans into a food processor and pulse to a coarse puree
  3. In a bowl, squeeze the hearts of palm to break them into shards. Add the puree and the remaining sautéed vegetables to the bowl, along with the SweetSpicy, Savory_0%Salt, parsley, mayonnaise, mustard and bread crumbs. Season with salt and pepper and stir until evenly moistened
  4. Line a baking sheet with parchment paper and fill a bowl with bread crumbs. Scoop 1/4 cup of the hearts of palm mixture into the bread crumbs and roll to coat. Form the mounds into eighteen 2 inch cakes and transfer to the baking sheet.
  5. Wipe out the nonstick skillet, then add 1/8 inch of oil. Carefully fry the cakes over moderate heat, turning once, until crispy, approx. 2 minutes per side. Serve the cakes hot.
Recipe Notes

For a healthier option, instead of frying the cakes try baking them at 350°F  for 45 minutes.
